Sweet Potato Fries

The sweet potato is filled with more nutrients than the white potato and it's high fiber content has a lower glycemic load. My husband and son do not like sweet potatoes but will eat sweet potato fries. I have bought them in the frozen section of the grocery store before but decided to try and make my own. They were a big hit and so easy to make!

Ingredients:
Two or three medium sweet potatoes
olive oil
salt and pepper
any other seasoning you enjoy

Preheat oven to about 425

Peel the potatoes and cut into fries sized strips. ( Sweet potatoes are hard to cut so use a good sharp knife.)

Put the potatoes in a large bowl or a plastic bag. Drizzle with about a tablespoon of oil and sprinkle with seasoning. Mix until all the pieces are covered.

Spread one layer think on a baking sheet and cook for about 20 minutes or until the fries look well toasted.

Homemade sweet potato fries will not be very crispy but they are still delicious. :)
